Okra, yay or nay? I love it, but only when cooked this way, nice and dry and no slime! Oh and okra fries, love them too. Oh and we have an American friend who makes a mean gumbo. Which is what okra is called here in France. In the UK we also call it ladies fingers.
Quick okra fry - slice 200g okra and half a red onion. Heat a little oil in a non stick pan and cook the okra for 5 minutes, over a medium heat, stirring. Turn the heat down and add the onion. Cook for 2 minutes then add 1 tsp coriander powder, 1/2 tsp each chilli powder, garam masala, mango powder and a pinch of salt. Cook whilst stirring for a few minutes until the spices are no longer raw.
